What single lesson could meet the needs of varied learners?

I have about three weeks until the first site visits and am still preparing by reading books and collecting art materials.

The question posted in the title of this post, comes from the book, Engaging Learners Through Artmaking: Choice-Based Art Education in the Classroom. The authors of this book, give examples of how choice based art education is beneficial to students and manageable for educators even with small budgets and large classes.

"The simple answer is that there is no one lesson and no one way to provide instruction in visual art that will satisfy the curiosities, interests and personalities in a classroom of learners" (p.1).

What might a choice-based art (or early childhood) classroom  look like?
